WHAT IS GLUTEN?

Gluten is a protein substance found in wheat, barley and rye that gives dough its elasticity.  Therefore, where wheat is present, gluten is present also.  It can be found in the least likely of places.  Typical places where you might find gluten include but are not limited to teabags, medicine, shampoo, soap, boullion, laundry detergent, shaving cream, lotions, vitamins, laxatives, and even packaged lunchmeats. Although gluten seems to be everywhere, there is something you can do to reduce or eliminate your exposure to it.
